Intentions for the Week

Looking to get your head in the game? Tracy from Shutterbean makes a weekly TO DO LIST called her Intentions for the Week. Here's what this week looks like:

It’s MONDAY!

We are on day 5 of social distancing right now. So far things are going OK, although I am slightly worried we won’t have enough food, but I always worry about that. I get that from my grandmother.  I’m mostly worried about not having fresh produce.

Cooper has a bunch of school work to do and he’ll be video conferencing with his class for the next few weeks. WHAT A TRIP!  We are still trying to convince my Dad that he needs to stay at home but he’s being stubborn and thinks everyone is overreacting so WISH US LUCK.

I spent the weekend doing some cleaning and a lot of gardening. We watched a few movies as a family too. As an introvert, life in isolation isn’t so bad 🙂

If you’re looking some ideas on what to make from pantry staples I put together this list:

Pantry Staple Meals for When You’re Stuck at Home!

I did some meal prep on Sunday too. Here’s what I added to the fridge:

I made:

  • bone broth

Recipes to Try:

Avocado Superfood Smoothie

If you have avocados to use up, put them in a smoothie! It makes them extra creamy.

Vegetable Tempura

Vegetable Tempura

A great way to use up leftover vegetables. The ingredients list is pretty simple!

Chicken Piccata

I would make this if I had chicken breasts. I have every other ingredient right but that right now!

Tuna Salad Sandwich

I’ll probably be makking this by the end of the week.

Want to impress dinner guests? Make these crispy Italian Fries! A combination of melted cheese and Italian herbs will level up your baked oven fry game. Recipe on Shutterbean.com!

Crispy Italian Fries

If you have potatoes and cheese, you can make these fries. They are addictive!

Turmeric Hot Toddy

Calming & soothing during this time!

Turmeric Latte

I am definitely going to be making these in the afternoon this week!

Brown Butter Kettle Corn

Will help us get through the next few weeks of homeschooling!

Pump Jam for the Week:

Mantra for the week!

Feeling stuck? Make a list! Write down your intentions for the week to help hold you accountable to action.

I’m rooting for you!

Sending sparkles,

Tracy
